Biscoff Ice Box Cake by Melissa Ben-Ishay

Ingredients:

  • 2 x 8.8oz sleeves of Lotus-style cookies
  • 1 pint heavy cream
  • 2 tbsp powdered sugar
  • 1/2 tsp salt
  • 1/3 cup cream cheese
  • 1/2 cup cookie butter
  • 1 tsp vanilla extract
  • 1 tsp lemon juice
  • Extra cookie butter (for topping)
  • Flaky salt

Instructions:

  • Line a 9x5" loaf with wax paper
  • Whip the cream until soft peaks form
  • Add Cookie Butter/Cream Cheese and mix
  • Add vanilla/lemon and mix
  • Mix in the powdered sugar and salt
  • Line bottom of pan with lotus cookies, then layer whipped mix, repeat until full/you've used all the cream mixture (usually about 4 cookie/whipped mix layers total)
  • Melt about 1/2 cup cookie butter in microwave, pour over top, get it in all the little nooks and crannies 
  • Sprinkle with flaky salt
  • Refrigerate 24 hrs
