Biscoff Ice Box Cake by Melissa Ben-Ishay

Ingredients:

<ul type="disc">
	<li>2 x 8.8oz sleeves of Lotus-style cookies</li>
	<li>1 pint heavy cream</li>
	<li>2 tbsp powdered sugar</li>
	<li>1/2 tsp salt</li>
	<li>1/3 cup cream cheese</li>
	<li>1/2 cup cookie butter</li>
	<li>1 tsp vanilla extract</li>
	<li>1 tsp lemon juice</li>
	<li>Extra cookie butter (for topping)</li>
	<li>Flaky salt</li>
</ul>

Instructions:

<ul type="disc">
	<li>Line a 9x5" loaf with wax paper</li>
	<li>Whip the cream until soft peaks form</li>
	<li>Add Cookie Butter/Cream Cheese and mix</li>
	<li>Add vanilla/lemon and mix</li>
	<li>Mix in the powdered sugar and salt</li>
	<li>Line bottom of pan with lotus cookies, then layer whipped mix, repeat until full/you've used all the cream mixture (usually about 4 cookie/whipped mix layers total)</li>
	<li>Melt about 1/2 cup cookie butter in microwave, pour over top, get it in all the little nooks and crannies&nbsp;</li>
	<li>Sprinkle with flaky salt</li>
	<li>Refrigerate 24 hrs</li>
	<li>ENJOY</li>
