Salt Hank’s Birria Dip from his cookbook Salt Hank: A Five Napkin Situation

Recipe ingredients:

	<li>1 medium (2-pound) chuck roast&nbsp;</li>
	<li>2 ½ cups vegetable oil, divided&nbsp;</li>
	<li>½ tablespoon kosher salt, plus more for seasoning&nbsp;</li>
	<li>½ tablespoon freshly ground black pepper, plus more for seasoning&nbsp;</li>
	<li>2 white onions, one thinly sliced, one finely diced, divided&nbsp;</li>
	<li>12 garlic cloves&nbsp;</li>
	<li>10 dried ancho chilis&nbsp;</li>
	<li>3 dried guajillo chilis&nbsp;</li>
	<li>4 tablespoons dried oregano&nbsp;</li>
	<li>12 cups beef stock&nbsp;</li>
	<li>1 tablespoon beef bouillon base&nbsp;</li>
	<li>½ cup all purpose flour&nbsp;</li>
	<li>½ tablespoon cayenne&nbsp;</li>
	<li>½ tablespoon paprika&nbsp;</li>
	<li>½ tablespoon garlic powder&nbsp;</li>
	<li>½ tablespoon onion powder&nbsp;</li>
	<li>6 green onions, thinly sliced lengthwise&nbsp;</li>
	<li>1 ½ cups whole milk&nbsp;</li>
	<li>1 rustic baguette&nbsp;</li>
	<li>2 cups shredded mozzarella cheese&nbsp;</li>
	<li>2 tablespoons extra-virgin olive oil&nbsp;</li>
	<li>1 cup packed fresh cilantro leaves&nbsp;</li>
	<li>Benny’s Avocado Salsa</li>
</ul>

Cook time 2 hours

STEP 1: Make the roast

<ul type="disc">
	<li>Have chuck roast already cubes and seared</li>
	<li>Add onions, garlic, chilis, and oregano, beef stock and bouillon to pan. Add chunks to pot. Cook until tender.</li>
</ul>

STEP 2: Assemble

<ul type="disc">
	<li>Have consommé already blended for dipping</li>
	<li>Add chuck roast to baguette, top with cheese. Add to frying pan. Garnish</li>
