Sweet Potato Mash with Balsamic Caramelized Red Onions

Sweet Potato Mash

  • 3 Large Sweet Potatoes
  • 1 1/2 Tsp Sea Salt
  • 1 Cup Plain Vegan Yogurt

Balsamic Caramelized Red Onions

  • 3 Red Onions
  • 2 Tbsp Olive Oil
  • 1/2 Tsp Sea Salt
  • 2 Springs Rosemary Extra for garnish
  • 1/4 Cup Balsamic Vinegar
  • 1 Tbsp Maple Syrup

To make sweet potato mash:

1.    Cut sweet potatoes into quarters.

2.    Add steamer basket to a large pot and pour in 2 inches of water (approx. 3 cups).

3.    Bring to a boil, arrange sweet potatoes cut side down, and cover with lid.

4.    Steam for 20 minutes flesh side down, or until tender and easily pierced by a fork.

5.    Remove from pot and cool slightly. Peel and add flesh into a food processor (approx. 4 cups). Add in sea salt and yogurt. 

6.    Process until mixture is smooth.

7.    Serve warm topped with balsamic caramelized red onions and additional chopped rosemary.





To make balsamic caramelized red onions:

1.    Thinly slice onions (approx. 4 cups)

2.    Warm olive oil in a large wide pan over medium flame.

3.    Fold in sliced onions and sea salt and cook over high flame for 5 minutes, stirring occasionally.

4.    De-stem and finely chop rosemary (approx. 1 tablespoon). Fold into mixture. Reduce flame to medium and cook for an additional 5 minutes, stirring frequently.

5.    Add balsamic vinegar and maple syrup to onions and cook for 2 minutes, or until onion mixture appears syrupy.

6.    Serve over sweet potato mash and garnish with additional minced rosemary.
