Pilar Valdes' Extra Terrestrial Treats
Nothing quite screams Halloween like Reese’s X Puffed Rice Treats. We updated a classic using a brown butter base and filled it with peanut butter candies. We think E.T. would approve!
- 5 0z unsalted butter, cut into pieces, plus more for the pan
- 11 oz marshmallows
- ½ tsp kosher salt
- 1 ½ cup Reese's Pieces
- 7 cups Puffed Rice Cereal (feel free to mix puffed rice/ puffed quinoa)
- ¼ tsp ground cinnamon
Grease an 8x8 square pan with a touch of butter.
In a large mixing bowl, combine the puffed cereal, salt and Reese's Pieces.
Place the butter in a medium saucepan (large enough to fit the marshmallows). Warm over medium heat until melted. As soon as the butter is fully melted it will start to foam and sputter; stir frequently and adjust the heat as needed, until the foaming subsides, the milk solids turn brown, and the butter releases a nutty aroma (about 3-4 minutes). Remove from heat. Stir in the marshmallow until smooth. Add the cinnamon.
Pour the marshmallow creme onto the cereal and mix to combine.
Press into the prepared pan and let cool and firm at room temperature for at least 1 hour. Cut into serving portions using your favorite Halloween cookie cutters.
