Pilar Valdes' Beet-Ginger ‘Mule’


ingredients

  • ½ oz honey
  • 1 oz freshly squeezed Lemon Juice (from half a lemon)
  • 2 oz Ginger Beer, divided
  • 2 oz Beet juice
  • 1 oz tonic water
  • Ice

prep

  • In a cocktail shaker filled with ice, add honey, lemon juice, beet juice and 1 ounce ginger beer.
  • Shake well until fully chilled.
  • Strain and pour into a serving glass filled with ice.
  • Top with remaining 1 ounce ginger beer and tonic water.
  • Serve cold.
