Lauren Palmeri's Cardamom Palmiers AND Parmesan Palmiers

Cardamom Palmiers

  • 1 Sheet Store-Bought Puff Pastry Thawed to room temperature
  • 1/2 Cup Granulated Sugar Plus 2 tbsp
  • 1 Tsp Ground Cardamom
  • Zest of 1 Orange

Parmesan Palmiers

  • 1 Sheet Store-Bought Puff Pastry Thawed to room temperature
  • 1/2 Cup Parmesan Grated
  • 1 Tsp Black Pepper Finely ground
  • 1 Tsp Fresh Thyme Leaves Roughly chopped

CARDAMOM PALMIERS



 



1. Preheat oven to 400F. Line a baking sheet with parchment paper.





2. In a medium bowl, combine the sugar, orange zest, and cardamom.





3. Sprinkle ¼ cup of the mixture on a clean work surface and lay pastry on top.





4. Sprinkle ¼ cup of the mixture on top of the pastry.





5. Using a rolling pin, roll pastry in one direction, into a 1/8-inch thick rectangle.





6. Fold the edge of one long side to the center of the dough, Repeat with the other side. Repeat this step one more time.





7. Transfer to baking sheet, upside-down, and freeze for 15-30 minutes.





8. Remove and slice into ½-inch pieces.





9. Transfer cookies to baking sheet and sprinkle remaining sugar on top.





10. Bake for 15-20 minutes, until golden brown.



 



PARMESAN PALMIERS
