Dawn Russell's Zucchini Bread

  • 1 Cup Vegetable Oil
  • 3 Cups Spelt Flour
  • 2 Tsp Baking Soda
  • 4 Eggs
  • 1/4 Cup Omega Oil
  • 2 Tsp Cinnamon
  • 1 Cup Xylitol (Sugar Substitute)
  • 1 Cup Sugar
  • 1 Tbsp Vanilla
  • 3 Cups Shredded Zucchinis (2 Medium Zucchinis)
  • 1 Cup Crushed Walnuts Optional



Grease a loaf pan, then set aside. Preheat oven to 350. 

Place flour and baking soda in a bowl.  

Place eggs, both oils, cinnamon, sugars, vanilla extract in another bowl and whisk. Add egg mixture to the dry ingredient bowl and whisk. Mix in grated zucchini. 

Pour batter into greased loaf pan. Bake in oven at 350f for 40 mins.
