Dawn Russell's Chia Seed Pudding


  • 2 cups coconut milk
  • ¾ cup chia seeds


Note: Measurements can be cut in half to fit cereal bowl.

  1. Whisk together coconut milk and chia seeds.

  2. Let rest for 15 minutes, then whisk again. Let set in the fridge for 2-6 hours, but ideally overnight. Serve with light or sour fruit of your choice.
