Caramelized Onion and Asparagus Frittata

  • 2 Tbsp Olive Oil
  • 1 Large Yellow Onion Thinly Sliced
  • 1 Bunch Asparagus Woody ends removed, and cut into bite-size pieces.
  • 12 Large Eggs
  • 1/4 Cup Milk
  • 1 Large Sweet Potato Cooked, peeled and mashed.
  • Salt and Freshly Black Pepper to Taste



In a large nonstick pan, heat olive oil over medium-high. Add the onion, season with salt and pepper, and cook until it starts to brown, about 8 minutes. Turn heat to low and cook until caramelized, about 20 more minutes. 

Add asparagus to caramelized onions and cook for about 5 minutes. Meanwhile, beat eggs in medium bowl. Add milk, season with salt and pepper, and whisk to combine. Add beaten eggs to pan and start cooking like scrambled eggs. Cook until eggs start to set, then stop stirring. Dollop sweet potatoes on top. When the bottom has set up, remove from heat and finish cooking in oven until fully cooked and slightly golden on top, about 7 minutes. Let cool 10 minutes before removing to a cutting board. Cut, serve and enjoy!
